Hi! We’re Kate and Joe Hale, the owners and operators behind Hale on Wheels Mobile Italian Eatery. What started as a dream to bring authentic Italian flavors to the streets of Dallas–Fort Worth has grown into a chef-driven catering experience rooted in decades of culinary expertise and meaningful family traditions.
Executive Chef Joe Hale brings over 20 years of experience in the culinary industry, with a background that spans major hotels, golf clubs, and restaurants. Formally trained in New England, Joe developed a deep appreciation for classic techniques and high-quality ingredients. But his true inspiration comes from much closer to home—memories of cooking alongside his mom and grandma, where recipes weren’t just followed, they were lived. Those time-honored Italian traditions are at the heart of everything we serve today, from our handcrafted meatballs to our signature chicken parmesan.
Kate, Joe’s wife and business partner, is the driving force behind the scenes. A nurse by trade with a strong background in event planning, she brings organization, creativity, and a deep understanding of what it takes to execute seamless events. From your first inquiry to the final plate served, Kate ensures every detail is handled so you can enjoy the experience stress-free.
Together, we built Hale on Wheels as a chef-owned and operated mobile commercial kitchen, focused on delivering authentic East Coast Italian street cuisine with a personal touch. Unlike large catering companies, we take a hands-on approach to every event—because to us, it’s not just another booking, it’s your moment.
